Electrolux Foodservice has recently introduced a new upgraded banqueting system.

The system has been developed in order to guarantee the best results in terms of organisation, service, and food quality, as well as providing high savings in running costs.

Copthorne Hotel, NewcastleIt is a complete banquet system which integrates every stage from cooking and chilling, through to portioning and regeneration, and, finally serving. From cooking in an Electrolux Combination oven from size 10 GN 1/1 to 20 GN 1/1 the food easily transfers on a roll-in rack to the blast-chiller/freezer for safe coolingThe food is then portioned on to plates of up to 300mm diameter, which are loaded onto the racks for cold storage until a few minutes before service when the plated meals go back to the combination oven for reheating. Finally, to transfer the food to its destination the racks are transferred to a mobile holding station where the meals are kept at serving temperature by thermal jackets.With this system it is possible to serve 180 meals in a 20 minute period using just one 20 GN1/1 combination oven.Several high profile catering establishments have been quick to recognise the benefits of the new banqueting system and have already adopted its use. The Copthorne Newcastle caters for up to 1000 covers per day, of which up to 180 can be served together as a banquet at any one time. Graham Proctor, Executive Head Chef of Copthorne Newcastle ordered the new banqueting system at the same time as replacing some modular equipment with Electrolux 900 line equipment. He comments that: “The new Electrolux banqueting system is very quick, I can do vegetable regeneration in just 6 minutes. The steam mode on the combis is fantastic, and they are especially good for joints, but the best thing about the system is the speed.”

Time saved using the Electrolux banqueting system can also translate into savings in terms of manpower costs and minimum food wastage. In fact, tests show that the use of the Electrolux banqueting system can reduce costs per event by up to 34% with no wastage.
