Creating a Winning Kitchen

In 2004, Master chef Gert Klötzke led the Swedish chef team to their victory at the Culinary Olympics. Today he is continously building their training grounds at Sweden’s historic Gripsholm’s Värdshus.

Putting together a kitchen worthy of the 20 world-renowned chefs who will train there has been no small challenge. But it has helped to have the right resources. Like help from kitchen designers and appliance experts at Electrolux.Within a few months, the100-square-meters of workspace will be fitted with steam ovens and fixed stoves as well as movable hobs that can be taken along to competitions. All hobs in the kitchen use induction, which according to Klötzke is indispensable to the modern chef: “Since induction burners require the use of stainless steel pans, you don’t have to worry about the aluminum reacting with the sauce. Plus the switches allow for the same precision as a gas hob, but without all that surrounding heat.”
The kitchen also features stainless steel throughout. In the separate pastry and cold kitchen, stainless steel is complemented with granite countertops and solid oak boards for baking. “Most importantly,” says Klötzke, “it has to be easy to clean.” Having previously built five other professional kitchens, Klötzke also values flexibility: “You have to design your kitchen in modules, because your needs and purposes might change over time.”
