Light dishes are available from the Winter Garden coffee shop and for weddings or other special functions the hotel can offer a choice of banqueting suites to serve up to 800 diners.

A busy brigade of chefs headed by Alex Summers meet this daily workload from two kitchens designed and supplied by  Electrolux. At the heart of the operation is a new banqueting system developed by Electrolux to enable dishes for functions to be prepared in advance, when workloads permit, stored at a safe temperature and reheated immediately prior to service so all of the original flavours and nutritional values are retained.

The main hotel can accommodate up to 800 people, with the Exhibition Centre seating  a further 400. The new Electrolux system enables the hotel to meet these requirementswith just four 20 GN1/1 combi ovens and two blast chillers. Using the mobile holding station and thermal  blankets each oven can deliver 180 plated meals at a perfect serving temperature in under 20 minutes.

The process starts in the main banqueting  kitchen which features Electrolux food preparation equipment, a central island cooking suite of 900 line units, two 20 GN1/1 combi ovens with matching blast chillers and cold storage. Using fresh ingredients the meals are cooked, chilled, portioned and stored until required. Meals can also be regenerated in this kitchen or transported in the mobile holding stations to another kitchen on the floor above which has a further two 20 GN1/1 ovens.
